Executive Chef Hector Lucas brings his highly acclaimed culinary skill to Anica, the new signature restaurant to open within Grand Solmar at Rancho San Lucas Resort Golf & Spa. An excellent addition to Los Cabos’ flourishing gastronomic scene, Anica presents Baja-inspired dishes masterfully created using locally-sourced ingredients and freshly-caught seafood that keeps guests and residents of Rancho San Lucas wanting more.
“After establishing La Roca restaurant at Rancho San Lucas’ sister property Grand Solmar Land’s End Resort & Spa as one of the areas’ best, Chef Lucas has raised the bar at Anica,” explains VP of Operations Ricardo Orozco. “The elegant atmosphere that overlooks a saltwater lagoon paired with an exquisitely imagined menu makes Anica a Shoo-in.”
The name Anica originates from Cochimi, an area in Baja California Sur inhabited by indigenous ranches. This was the inspiration for both the restaurant’s beautifully designed interiors and gastronomic offering. Upon arrival, guests feel the restaurant’s grandeur with its impressive spacious foyer accented with wood furniture and iron chandeliers. The entire setting, both indoor and outdoor, mixes materials perfectly by melding warm hues of wood, leather and ironwork.
The space sets the tone for a memorable dining experience whether it be for breakfast, lunch or dinner. In the morning, guests can choose from either an a la carte or buffet menu offering authentic Mexican cuisine, freshly baked breads, native fruit smoothies and more. Among the must-try specialties are the Roasted Chicken au Tamarind and a roasted pepper filled with scrambled eggs paired with crispy bacon bathed in a Chardonnay cheese sauce. The Motuleños style eggs are also tempting, presented atop a crispy tortilla with ham, plantains and mozzarella cheese and covered with achiote and tomato sauce. For lunch, Anica offers guests healthy dishes including freshly-made ceviche or lobster enchiladas with Poblano chili sauce and roasted corn.
For dinner, enticing appetizers range from delicious soft tacos filled with shrimp pâté and cilantro topped with tomatillo sauce or a warm Pasilla chile soup served with fried plantains and crunchy onions. For the main course, guests can try an assortment of authentically Mexican dishes or other innovative creations including the seared tuna served with chickpea pipian sauce, chilli and tortilla butter, the grilled chicken with a honey and garlic sauce paired with potatoes and squash bites, and the creamy jumbo coconut shrimp served with steamed vegetables, focaccia bread and a creamy tequila and coconut sauce.
“The common theme throughout Anica’s menu is authenticity and freshness, something that our guests truly appreciate. We source the produce from local towns and farms such as the tomatoes, oranges, dragon fruit, pitaya and herbs. We even have a dessert, the Mangate Cake, that was inspired by a local mango festival in Todos Santos, a town on the Pacific coast of Mexico’s Baja California Peninsula. Then of course the fish and seafood, the highlight of our menu, is always freshly caught and comes from La Paz and Cabo San Lucas.” explains Chef Hector. “There is not cutting corners here; we only use the best quality ingredients at all our restaurants.”
In addition to this menu, Anica offers gluten-free, vegetarian and kid’s options. Guests can also expect to have specialty items at Anica when celebrating both Mexican and American holidays.
