Besides the nightly party procession with string bands, colorful dancers, gobs of confetti, and thousands of beads, every day starting at 4 p.m. the celebration includes a wide array of Cajun culinary delights like spicy jambalaya, shrimp gumbo, red beans and rice, sweet beignets, and specialty signature cocktails so guests can savor the authentic flavors of New Orleans.
