Every year, Universal ups the ante to produce the largest, most flamboyant Mardi Gras party outside of Bourbon Street and this year is no different. Besides the nightly party procession with string bands, colorful dancers, gobs of confetti, and thousands of beads, every day starting at 4 p.m. the celebration includes a wide array of Cajun culinary delights like spicy jambalaya, shrimp gumbo, red beans and rice, sweet beignets, and specialty signature cocktails so guests can savor the authentic flavors of New Orleans.
